This is a wonderful recipe that I had received when I was about 19 years old from one of my campus roommates, as we both set off into married life. You can change the meat and add or remove vegetables as you choose, but it is a good base recipe and one that satisfies pretty much anyone. I even used it with my kids when they were growing up and it was always a favorite. If you need to add more portions, use more potatoes, corn, and maybe another can of soup.

10 sm to med potatoes or 5 lg ones diced (I personally like the yellow ones, but any will do)
1 can corn (drained)
1 can cream soup (we have liked celery or onion best)

COMBINE FIRST THREE IN BOWL

1 onion diced
2 carrots sliced
tad bit of butter

COMBINE THESE THREE IN PAN AND SAUTE UNTIL ONIONS ARE CLEAR AND THEN DRAIN

ADD TO BOWL

brown 1 lb. ground sausage (you can use any kind of meat but sausage has the best flavor)

DRAIN AND ADD TO BOWL

STIR TO COMBINE. POUR ENTIRE THING INTO 9X13 BAKING DISH AND BAKE (uncovered) FOR ONE HOUR AT 350 degrees.

Add salt and pepper to taste if desired.

I hope you enjoy this as much as we have. My husband drives the Amish and eats with them frequently and says that it is very much like many of their meals.
